Food and recipes in Germany’s northern realms are mainly influenced by the area's close proximity to the North Sea and the Baltic Sea. The traditional pride of the days of the Hanseatic League still exists in the ports. The heritage of the sailors is still alive in cosy pubs and restaurants and is also reflected in the way of eating. The bracing climate of the region reddens the cheeks and creates a healthy appetite. And the sea takes care of this in its own special way. Regional dishes are usually based on fish, typically plaice, herring, cod and shrimp, the hinterland supplies potatoes, cabbage and rutabaga. The perfect way to round off a northern meal is "Rote Grütze", a red fruit pudding, and a "Pharisaer" – a coffee with a good swig of rum, topped with an innocent dollop of whipped cream.
